Every collaborator carries its own contact details, so the number you need is on the record itself.

The fields

The email address is a link, so clicking it opens a new message in your mail app.

Edit the details

Click Edit Collaborator, fill in the fields and click Save Changes. Notes can also be typed straight onto the collaborator page: click the notes area, type and save. Clearing a field and saving empties it, so you can tidy up details that are out of date.
If you deal with several people at the same firm, keep their names in Notes and use the phone and email fields for the main point of contact.
